
This slice is a guilt free way to satisfy your chocolate cravings. A great dessert or afternoon tea treat that is decadent, rich and moreish. It is sweetened with coconut nectar which is a natural, low G.I sugar alternative. This slice is easy to make and hassle free - something the whole family will enjoy.
CHOCOLATE NUT SLICE
Makes 18-20 slices.
INGREDIENTS
BASE
1 ½ cups of cashew nuts, blended to flour
½ cup of walnuts, blended to flour
8 dried dates, finely chopped
2/3 cup desiccated coconut
1/3 cup cacao powder
¼ cup coconut nectar
CHOCOLATE ICING LAYER
100g cacao butter
¼ cup extra virgin coconut oil
¾ teaspoon vanilla paste
¼ cup coconut nectar
½ cup cacao powder
3 Tablespoons of coconut cream
Pinch of salt
1 cup of strawberries for topping (optional seasonal fruit of your choice)
METHOD
Prepare and line a slice tin with baking paper.
BASE
- Process all base ingredients together in a food processor for approximately 1 minute or until it forms a dough-like consistency.
- Remove the mixture and press evenly into prepared tin. Refrigerate while you make the chocolate icing.
CHOCOLATE ICING LAYER
- Melt cacao butter over a saucepan of simmering water (ensure the bowl does not touch the water). Once melted, whisk in all the remaining ingredients.
- Remove from heat and pour over the base evenly.
- Refrigerate for approximately 10 minutes until the chocolate layer is cooled but not set. Add the thinly sliced strawberries on the top then refrigerate until chocolate is set.
