Purple Corn Shortbread

These tasty little morsels will get your mouth watering - as well as giving you your daily superfood fix! Made with our purple corn flour – they are rich in antioxidants which are great for your general health and well-being (not to mention may help reduce the risk of cardiovascular disease and premature aging!). This shortbread is also packed with vitamins and minerals thanks to the Lucuma and Chia Powder! Delicious with a healthy tea or matcha latte. Crispy and scrumptious. 

PURPLE CORN SHORTBREAD

 

INGREDIENTS

200gm soft butter
100gm softened Coconut Butter (warmed up not hot)
½ cup +2 tbsp Pure Coconut Sugar
1.5 cup flour
½ cup Purple Corn Flour

Optional: 
2 tbsp Lucuma Powder
1 tbsp Chia Powder

*If you add the Lucuma and Chia Powders make sure you reduce the standard flour by the equivalent amount


METHOD

  1. Mix the butters and coconut sugar until smooth
  2. Add remaining ingredients and mix thoroughly
  3. Roll into a ball
  4. Dust your counter top with flour and roll out to 6mm
  5. Cut into squares (or whatever shapes you like!)
  6. Arrange closely on a baking tray & prick with fork
  7. Bake at 150degrees for 25 – 30mins
  8. Enjoy!
