The Organic Basket have made a delightful cheesecake using a beautiful summer fruit - passionfruit. They have created this tasty recipe using only wholefood ingredients. Share with friends and enjoy a lovely dessert.
RAW PASSIONFRUIT CHEESECAKE
INGREDIENTS
Base
1 cup activated almonds
1 cup desiccated coconut
12 dates
1/2 tsp vanilla essence
Filling
1 cup of raw cashews (soaked overnight)
1 cup coconut yoghurt
1/2 cup coconut butter (melted)
1 tsp vanilla essence
1/3 cup rice malt syrup
3/4 cup passionfruit pulp (4 fruits approx.)
1 lemon juice
The pulp of one passionfruit for the topping
METHOD
- Process the nuts and coconut until it can be broken up into a nice crumble and then add the dates. Once the mixture comes together and holds well it is ready. If you over process the nuts will release a little too much and it will become oily
- In a food processor blend all the filling ingredients until smooth. Pour into the base and drizzle the passionfruit topping over the top
- Cover with baking paper (touching the filling) to prevent freezer burn. Set in the freezer for at least 4 hours or overnight
- Remove from the freezer 30 minutes prior to serving
