Blueberry Pancakes & Blueberry Lemon Cream Icing

These delicious Blueberry Banana Pancakes with Blueberry Lemon Cream Icing are made with our Organic Blueberry Powder and are both sugar-free and gluten-free.

Blueberries are a true superfood with their high levels of antioxidants! Our organic Blueberry Powder is freeze-dried to lock in the antioxidants and phytonutrients of fresh blueberries.

 


BLUEBERRY LEMON CREAM ICING

INGREDIENTS

½ a cup soaked cashews
Juice from half a lemon
1 Tbsp of maple syrup
1 tsp of nutritional yeast
A pinch of sea salt
1 Tbsp of water
1 - 2 Tbsp of Matakana SuperFoods Organic Blueberry Powder 


 METHOD

  1. Blend all ingredients until you get a smooth mixture
  2. Store the icing in a jar and use on cupcakes, muffins, donuts or pancakes

 


PANCAKES

INGREDIENTS

½ a cup of gluten-free rolled oats
½ a cup of almond milk
1 ripe banana
1 tsp of baking powder
A pinch of sea salt
1 tsp of Matakana SuperFoods Maca powder 
2 Tbsp of  Matakana SuperFoods Organic Blueberry Powder 
1 tsp of vanilla extract or Matakana SuperFoods Vanilla Bean Powder

 

METHOD

  1. Blend all of the ingredients together until the mixture has a smooth consistency
  2. Heat your pan and add some Organic Extra Virgin Coconut Oil
  3. Spoon out four palm sized pancakes
  4. Turn each when they are golden brown on one side, set aside once fully cooked
    This recipe makes 12 so continue to create them until the mixture is gone
  5. Decorate with the Blueberry Lemon Cream Icing, blueberries and edible flowers
