Collagen Twix Bars

1 cup almond flour
½ cup oat flour
½ cup coconut flour
2 tbsp Marine Collagen Peptide Powder
1 tbsp coconut oil
¼ cup almond butter
1-2 tbsp rice malt syrup or agave
¼ tsp salt
½ cup almond butter
⅓ cup maple syrup
1 tbsp Marine Collagen Peptide Powder
⅓ cup melted coconut oil
¼ tsp salt
Melted Chocolate of choice for coating
  1. To make the base, pulse all ingredients in a food processor until a dough forms. Add more liquid if necessary, until it holds together firmly.
  2. Press into a small lined loaf tin.
  3. To make the caramel, whisk together the Marine Collagen Peptide Powder, almond butter and maple syrup until smooth. Add the coconut oil and salt and continue to whisk until it thickens into a caramel.
  4. Pour over the base and freeze for 1 hour.
  5. Whisk together all chocolate ingredients until smooth.
  6. Melt the chocolate in a microwave safe bowl or over a double boiler.
  7. Slice the slice into thin fingers, and proceed to coat each bar and set on a piece of baking paper to set.
  8. Store bars in an air-tight container in the fridge.
