Ingredients (makes 20/25 cookies)
1/2 cup Matakana SuperFoods cacao butter
1/2 cup butter
1/2 cup Matakana SuperFoods Hemp Flour
1 cup flour
1/2 cup Matakana SuperFoods Coconut Sugar
1 small egg
1/4 tsp Matakana SuperFoods Vanilla Bean Powder
1 cup flour
1/2 cup Matakana SuperFoods Coconut Sugar
1 small egg
1/4 tsp Matakana SuperFoods Vanilla Bean Powder
Method
- Pre-heat oven to 210°C. Line an oven tray with baking paper and set aside.
- In a bowl, mix the butters, sugar, vanilla and egg together until well combined.
- Add flours and mix well.
- Create a roll with the mixture and wrap it in baking paper or environmentally-friendly beeswax wrap.
- Let harden in the fridge for at least 30 minutes.
- Cut into slices and bake 210°C for 10 to 15 minutes.
- Let cool and serve.
For a chocolatey crunch, add 1-2 Tbsp Matakana SuperFoods Cacao Nibs to the mixture.
