Peppermint Slice

Ingredients

Base

1 cup almonds
1 cup coconut flakes
1 cup medjool dates, pitted
1 tsp coconut oil
Pinch of salt
Water as needed
Mint Filling
2.5 cups raw cashews, soaked until soft
1 cup full fat coconut cream
¾ cup organic maple syrup
1 tsp Matakana Spirulina
1/2 cup melted coconut oil
pinch of salt
few drops of peppermint essence, to taste
Chocolate Layer
¼ cup cacao powder
Extra coconut cream, as needed.
Extra maple syrup, as needed.
Method 
  1. For the base, pulse all ingredients in a food processor until a dough forms. Press into a lined loaf tin.
  2. For the filling, blend all Mint Filling ingredients together in a high speed blender until smooth and creamy. Feel free to add more spirulina or natural green food coloring to reach your desired colour. Reserve 1/3 of this mixture to the side.
  3. Pour the mint filling over the base and freeze for 1 hour or until firm.
  4. In the meantime, blend the remaining mint filling with the cacao powder, adding more coconut cream and maple syrup as needed to reach the same consistency as the mint filling.
  5. Once the mint filling is firm, pour the chocolate layer over and spread evenly with a spoon.
  6. Return the slice to the freezer and freeze for an extra 2-3 hours until firm. Slice and enjoy! Keep slices stored in and chilled in an air tight container.
