Quick & Flavourful Shrimp Tom Yum Clear Soup - Serves 2

Ingredients

4 heaped teaspoons Mekhala Organic Tom Yum Paste
2 cups vegetable or chicken broth
8 large shrimp
1 cup straw or button mushrooms
Chilli, coriander and lime for garnish (optional)

Method

  1. Add all ingredients into a pot, put lid on and bring to a boil.
  2. Turn down to a simmer and simmer for 4 minutes or till shrimp is cooked.
  3. Serve with chilli, coriander and a squeeze of lime.
